Servings: 12 Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes

Ingredients:

3 sheets nori paper

1½ cups cooked sushi rice, cooled

Salmon:

1 lb salmon, skin removed + cubed small

2 tbsp sesame oil (or olive oil)

1 tbsp low sodium soy sauce

1 tbsp honey

2 scallions, diced

1/2 tsp each garlic powder, onion powder, chili powder, paprika, dried oregano

Salt to taste

Spicy Mayo:

1/4 cup Kewpie mayo

2 tsp Sriracha sauce

1 tsp honey

Toppings:

1/2 avocado, diced small

2 tsp black sesame seeds

Instructions:

Prepare the Nori Squares: Preheat your oven to 400°F. Using scissors, cut each nori sheet into four equal squares.

Marinate the Salmon: In a mixing bowl, combine the cubed salmon with sesame oil, low sodium soy sauce, honey, diced scallions, garlic powder, onion powder, chili powder, paprika, dried oregano, and salt. Allow the salmon to marinate for up to 4 hours, ensuring each piece is coated evenly.

Assemble the Muffins: Place a heaping tablespoon of cooked sushi rice onto each nori square, spreading it out slightly. Transfer each square to a muffin slot, gently pressing down to form a base with the edges rising along the sides. Fill each muffin slot with 4-5 marinated salmon cubes.

Bake to Perfection: Bake the muffins in the preheated oven for 15-17 minutes until the salmon is cooked through and the edges of the nori are crispy. For an extra golden finish, broil the muffins for 1-2 minutes at the end.

Garnish and Serve: Once baked, allow the muffins to cool slightly before topping them with diced avocado, black sesame seeds, and a drizzle of spicy mayo.
