 Homemade Flour Tortillas: Elevate Your Meals with Fresh, Flavorful Wraps






There's something undeniably satisfying about homemade flour tortillas. Ingredients:


2 ¼ cups (280 g) all-purpose flour, plus extra for dusting

½ teaspoon (3 g) baking powder

2 teaspoons (7 g) Diamond Crystal kosher salt

3 tablespoons (24 g) oil or another type of fat

¾ cup (150 g) warm water

Instructions:


Prepare the Dough:


In a mixing bowl, combine the all-purpose flour, baking powder, salt, and oil. Ensure the flour is aerated by whisking it in the container before measuring.

Add the warm water to the dry ingredients and mix using a fork or Dutch whisk until a shaggy, sticky dough forms.



Knead the Dough:


Dust your work surface with a bit of extra flour and transfer the dough onto it.

Knead the dough for 2 to 3 minutes until it becomes smooth and elastic.

Place the dough back into the bowl, cover it with a clean kitchen towel, and let it rest for 10 to 15 minutes.



Shape and Cook the Tortillas:


Divide the rested dough into eight equal pieces and shape each piece into a ball by rolling it against the work surface with your hand.

While preheating a cast-iron skillet over medium heat for 4 to 5 minutes or until smoking hot, cover the dough balls with a clean kitchen towel.

Roll out each dough ball into an 8 to 9 inch circle on a floured surface, aiming for thin tortillas.

Cook each tortilla in the skillet for 10 to 20 seconds on each side until lightly browned and bubbly.



Keep Them Soft and Warm:


Place a damp towel on a plate and wrap each cooked tortilla in it as you continue cooking the rest. This will keep them soft and warm.


Storage:


Store the tortillas in a ziplock bag in the refrigerator for up to a week.
